Marinated Confetti Slaw
2 medium Mississippi sweet potatoes, raw and julienned
½ cabbage cut with knife into thin strips
1 large onion cut in thin rings
½ large green pepper cut in thin strips
½ large red pepper cut in thin strips
1cup raw broccoli, well-trimmed
¼ cup fresh parsley, chopped
¾ cup olive oil
1 T. salt
1 cup vinegar
2 t. sugar
1 t. dry mustard
1 t. celery seed
Instructions: In large bowl, cover cut vegetables with 1 cup of sugar. Bring dressing ingredients to a boil and pour over vegetables while still hot. Store in a tightly sealed container in refrigerator for at least 24 hours. Shake and turn container often to thoroughly marinate slaw.
